CAULIFLOWER PIZZA CRUST RECIPE

At first I would make this pizza crust recipe for Nicky when she did not like veggies, but now we actually enjoy making it together! I know its not great to hide veggies but sometimes you got to do what you got to do, am I right?
I can’t really tell the difference between this and thin style pizza! You can make it in small bites like this or one big pizza to cut into traditional pizza slices. Just make sure to make the crust really, really thin so it comes out crispy.
INGREDIENTS:
1 small fresh cauliflower head
1/2 cup freshly grated parmesan cheese
1 egg
Pizza sauce
Mozzarella cheese
Optional: Pizza toppings
DIRECTIONS:
Wash and dry the cauliflower head. Cut florets off leaving the stem out. Put the cauliflower florets into a food processor and pulse until you get snow like cauliflower or “cauliflower rice.” A box grater will do in a pinch.
Add the cauliflower to a large skillet and cook over medium heat without adding any oil or water. Do this for about 10 minutes occasionally moving the cauliflower.
Allow cauliflower to cool a bit on the side.
Pour the cauliflower on a cheese cloth or dish towel and drain excess water.
Using a large bowl, add egg and beat. Add in the parmesan cheese and cauliflower. Mix well.
Line a baking sheet with parchment paper. Make small balls with the mixture and put them on the cooking sheet.
Using your fingers, spread out the cauliflower balls making small thin circles.
Place pizza crusts into a preheated oven of 400 degrees Fahrenheit for about 10-15 minutes or until you’ve baked the crusts, or until they’ve colored and firmed.
Remove pizza crust from the oven, add pizza sauce, cheese and desired toppings and bake another 10 minutes or until cheese has melted and turned golden-brown. Crust will be darker too.
These make for a healthy lunch or dinner option for little ones, while still making it a fun meal (I mean, its still pizza). I love kid friendly healthy recipes that my picky eaters enjoy and at the same time don’t make me feel guilty about feeding it to them! It’s the perfect combination with this recipe!
